If the Air A7 doubles the GPU performance from the iPhone A7 (since they said it was double the A6X, which had the same GPU performance as the A7 GPU in the iPhone), which one would the Mini be using?

Sigh, I shouldn't think about this stuff.

*which A7, as there seem to be two different performing models on the GPU side

They've increased the clock speed of the GPU I would guess. The A7 GPU is quite a bit faster than the A6x in more modern workloads, btw.

Love my job, since I've been bringing in $5600… I sit at home, music playing while I work in front of my new iMac that I got now that I'm making it online(Click on menu Home)

Not really sure how much point there would be, who tracks their walks and jogs with an iPad?

tracking your exercise movements easiest way to explain the M7 but remember the iPad had an accelerometer from day 1 so this is just a welcome advancement that can be used by apps across the board.
